Crepes

Ingredients

  • 1.5 cups flour
  • 1 tbsp starch
  • ¼ tsp salt
  • 2 tbsps oil
  • 1 cup plant milk
  • 1 cup water
  • Oil or vegan butter for frying

This recipe makes 6-8 crepes.

Instructions

To make the batter, whisk together a cup and a half of flour with a little salt and a tablespoon of starch. Add a cup of plant milk, a cup of water, and two tablespoons of oil. Whisk it all together until the batter is thin and viscous. 

To make the crepes, heat a frying pan and coat it with a little oil so the batter doesn’t stick. Pour in a ladle of batter and swish it around the pan to distribute it evenly. Leave it on medium heat for about two to three minutes until it’s lightly browned, then flip it to the other side and cook it for a few more minutes. Transfer it to a plate, cover with a lid, and repeat the process until you’ve used up your batter.

Best warm, you can serve them sweet, with jam and fruit, or savory with vegetables. You’re only limited by your imagination!
