Ingredients for 4 – 6 people:
- 500gr fine yellow cornmeal
- 2 cups European plain yogurt
- 1 block feta cheese
- 2 eggs
- 2 cups milk
- 1 cup water
- 1 tbsp baking powder
- 1/2 tbsp salt
- 1 tsp black pepper
- 1/4 cup vegetable oil or butter
- 300 gr fresh spinach
- 2-3 green onions or 1 small white onion
Finely mince the fresh spinach and put in a large bowl. Add salt and pepper to taste. Add the finely chopped onions. Add the oil or butter (the butter should be melted and warm so it softens the spinach). Add the crumbled cheese, 2 eggs, 2 cups of yogurt, 2 cups of milk, and mix together.
Separately mix the flour and the baking powder. Add it to the spinach and add up to a cup water to reach a smooth and runny consistency (the batter thickens as it bakes).
Grease a pan with oil and heat up in the preheated oven at 375 F. Pour the batter in the hot pan so it sizzles when poured. Bake until lightly browned, about 30 minutes. Enjoy with tarator and turshi and thank your Albanian for introducing you to this delicacy.
